Any kind of vegetables may be used for this soup: carrots, celery, cabbage, turnips, onions, potatoes, spinach, the outside leaves of lettuce or greens of any variety.

Select three or four kind of vegetables, shred or chop coarsely (нарезать крупно) cabbage or greens, and slice or cut in cubes the root vegetables. Put them over the fire with a small quantity of cooking oil or butter substitute, and let them fry until they have absorbed the fat. Then add broth and cook until the vegetables are very tender. I love a steaming hot bowl of soup in the middle of winter, and this recipe makes a lot of soup. Which suits me perfectly, because I have enough for dinner, with loads left over to freeze for later.

I regularly freeze soup during the winter months so I always have a meal ready to go in the freezer for those days when nothing goes to plan, or I am too tired to cook. Most soup mixes are generally made from quick cooked pulses and grains, or partially cooked pulses. Soup mix does not generally require soaking, however I would recommend you read the packet carefully to ensure that this is the case for the mix you have purchased.

Most soup mixes contain barley. Barley is not a gluten free grain. If you require a gluten free mix, either purchase a blend that is specifically labelled as gluten free or make your own given the proportions I have given above.

How long is dry soup mix good for?

Making vegetable soup is simple, and it all happens in one pot! Here’s an overview of how to make it (the soup recipe is below).

Sweat onions, carrots, and celery in olive oil and tomato paste. The tomato paste adds lots of flavor to the soup.

Add more flavor with garlic, ground fennel seeds (or use other spices), pepper, and salt.

Pour in vegetable or chicken stock, a can of diced tomatoes, potatoes, cabbage, and bay leaves.

My Favorite Variations of This Soup

This veggie soup has lots of possible variations. Here are a few of my favorites:

Add more protein by adding cooked or canned beans — white beans, chickpeas, and black beans would be excellent. (Take a look at our white bean soup with vegetables for inspiration.)

For a soup with pasta, add pasta about 10 minutes before the soup has finished cooking.

Make it creamy and add a splash of cream, milk, or unsweetened dairy-free milk like coconut. You can also stir in a little bit of unsweetened yogurt or sour cream. We do something similar in this creamy veggie soup.

We love the combination of ground fennel, garlic, and red pepper flakes, but you can use other spices. Try Italian seasoning, Za’atar spice blend, Cajun seasoning, an Indian spice blend like curry powder, or chili powder (here’s our homemade chili powder blend).

Add in some extra veggies. The number of vegetables you add to the soup is up to you. Feel free to toss in a handful of other vegetables like cauliflower, summer squash, or corn.
